Ingredients
- 2 Chicken Breasts with Greek maranade and seasoning
- 1 Pint of cherry tomatoes
- 1 Zucchini
- 1 Red Pepper
- 1 Red Onion
- 1 TBSP Olive Oil
- 6 Greek Pitas
- 1 Container of Tzatziki (homemade if you prefer)
Instructions
- Fire up your Coulee (we used the Coulee Colorado)
- Chop veggies and thread onto skewers, alternating variety
- Drizzle on EVOO, ensuring all veggies surfaces is covered so the veggies don't stick to the grill
- Cut chicken breasts into small 1 inch cubes and thread onto skewers
- Once fire is hot, place skewers on grill
- Grill for 10 minutes, flipping halfway
- Add pitas to grill to warm for approx. 1 minute, flipping halfway
- Remove everything from grill, spread tzatziki on pita, add desired veggies and chicken and enjoy!
